Goal:

The Mayo-Q project aims to revolutionize mayonnaise production at Cidacos by integrating advanced IoT and NIR spectroscopy sensors. This solution ensures continuous monitoring of mayonnaise quality, optimizing oil usage and maximizing production efficiency. Additionally, the project will collect data on an IoT platform to generate blockchain-certified reports, enhancing product traceability and transparency regarding the fat content of the mayonnaise.

Necessity and Challenges:

Mayo-Q addresses critical challenges in quality control and traceability within the mayonnaise production process. Continuous monitoring allows for rapid adjustments to maintain product specifications, preventing any batch from falling out of the required standards. This system also provides Cidacos with the capability to offer customers blockchain-certified reports, guaranteeing the fat content of each batch. Moreover, the solution ensures compliance with food safety regulations by maintaining a minimum fat percentage of 65%.
